Pilsner - used as a base for the production of Lagers and Ales.
Distinctive features of our malt production technology:
1. For soaking and germination of barley, we use very cold temperature conditions (no more than 13.5 C). This allows us to obtain a homogeneous malt rich in enzymes and eliminate the loss of dry matter for excessive growth and respiration of grain.
Accordingly, the extractivity in our malt is 1.0-1.5 % higher than in other malting plants. We don't use growth promoters and other additives, preferring to let the malt remains a natural product.
Low malting temperatures allow us to reduce the content of betta-glucan in malt to 70-90 mg/dm3 and increase the content of amine nitrogen to 160-170 mg/dm3.
2. For drying malt, we do not use accelerated temperature regimes. Pre-drying is conducted at low temperatures, which allows us to prevent damage to the enzymes, accumulated in the process of malting.
Using our malt will allow You to avoid:
- the attenuation of the fermentation, due to lack of amine nitrogen;
- increase filtration time, due to the high content of beta-glucan in malt;
- increase the yield of wort and beer in the barn
- to improve the head retention of beer.
